Clean Baked French Toast

When I get together with friends for brunch I always go into it thinking I'll just have the yogurt and granola or an egg white omelette and end up sucking down bone marrow and biscuits and gravy. In an attempt to clean up by brunch act, I turned to Pinterest and found a recipe for Clean Gingerbread Baked French Toast.  Is wasn't bad but it called for a tablespoon of pumpkin puree and who is going to open a whole can for a tablespoon?  Not me! I tweeked it to make it more pantry-friendly. I have to add that it's actually good but more in a Gwyneth Paltrow way instead of a Paula Deen way.

First you have to fit in your Ezekiel bread.  Three slices will serve two.

The thing that makes this so easy is liquid egg whites.  I get mine in a carton.  To a cup of egg whites (I'm guessing from around 4 or 5 eggs) add your spices and flavorings.

Mix and pour over your bread.

Recipe Tester wasn't too pleased I made him and his muddy feet stay outside for this one.

Bake at 350 degrees until egg is set and bread is crispy around the edges, about 10-12 minutes.

Serve with real maple syrup and turkey sausage.

It's easy and filling but won't make you want to go back to bed after you eat it.

Clean Baked French Toast

serves 2

3 slices Ezekiel Bread (sprouted grain bread)

1 cup liquid egg whites

1/2 tablespoon vanilla extract

1/2 teaspoon maple extract

1/4 teaspoon cinnamon

1/4 teaspoon ground ginger

1/8 teaspoon nutmeg

1/8 teaspoon ground cloves

pinch of salt

  1. Preheat oven to 350 degrees.
  2. Prepare baking dish by spraying with cooking spray (I use coconut spray from Trader Joe's) and fit in the bread in a single layer.
  3. Whisk together the egg whites and the next 7 ingredients.
  4. Pour the egg mixture over the bread and bake until the egg is set, about 10-12 minutes.
  5. Serve with real maple syrup.
